This summer I set out to discover everything I could about meat. Not just any hunk of beef, I tackled the tough guys...the self confident, unsung heroes of the meat counter. These macho meats are often passed right by for the more popular picks. These fellas may be tough on the outside but they are mighty tender on the inside; you just gotta get to know 'em! Whizzing my buggy through the meat department, I pause momentarily to scan labels, then backtrack slowly down the counter toward the reliable ground chuck, my all-purpose supper staple.
