The winter months make me crave warm cozy comfort food. So, to celebrate the 40th anniversary of my favorite kitchen appliance, the Crock-Pot, I shared my family's favorite slow-cooker recipes with readers.

Because January is the perfect month for slow-simmered meals.

I thought it was a grand opportunity to spend the next six weeks sharing Crock-Pot hall-of-fame recipes from some of my favorite gals. From entrées to desserts (yes, you can make a dessert in a Crock-Pot), each week promises a delicious slow cooker recipe for your family to try.

Girlfriend Chicken Tacos
    • 6 boneless, skinless chicken breasts
    • 1 bouillon cube (we recommend Knorr’s tomato bouillon with chicken flavor)
    • 1 package taco seasoning
    • 2 cups water
In a medium-size Crock-Pot, combine bouillon cube, taco seasoning and water. Mix thoroughly. Add boneless, skinless chicken breasts and stir to coat. Cover and cook on low 7-8 hours. Use two forks to shred chicken easily. Stir to coat, recover and cook 30 more minutes to absorb additional flavor. Serve as taco meat in tortillas or shells or over lettuce with tortilla chips for a taco salad. Garnish with shredded cheese, lettuce, sour cream and tomatoes.
